Garlic Scapes are green stalks that extend from the base of the hardneck variety of garlic plants, resembling oversize chives or scallions. They are a very versatile ingredient that function as a vegetables, aromatic and herb all in one.
How to use Garlic Scapes
Garlic scapes are less pungent than garlic cloves, they provide a subtle garlicky flavor and can be served cooked or raw. Garlic scapes are the ideal ingredients for pestos, frittatas, omelets, fried rice and pizza toppings. Garlic scapes can also be sauteed in olive oil with green beans or other vegetables or by themselves.
